  • 2 tablespoons butter
  • 340 grams (3/4 pound) top sirloin, cut into cubes
  • Salt and black pepper, to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 6 large potatoes, peeled
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 tablespoons chives, finely chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and butter over medium-high heat. Season beef cubes with salt and pepper and sear until browned on all sides, about 6–8 minutes.
  3. Add chopped onions and carrots to the skillet, sautéing until onions are translucent (4–5 minutes). Sprinkle flour over the mixture, cooking for 1–2 minutes.
  4. Pour in apple cider and beef broth, scraping up any browned bits. Bring to a boil, then transfer to a Dutch oven. Cover and bake for 60–90 minutes until beef is fork-tender.
  5. Meanwhile, boil potatoes in cold water until fork-tender (20–25 minutes). Drain, return to the pot, and mash with milk, sour cream, cheddar cheese, and chives.
  6. Serve stew over mashed potatoes.
