  • 4 large sweet onions, thinly sliced

  • 1 pound short cut pasta, cooked
  • 3 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 ½ cups milk
  • ¼ teaspoon freshly ground nutmeg
  • 12 ounces gruyere cheese, freshly grated
  • 4 ounces parmesan cheese, freshly grated
  • ⅓ cup seasoned bread crumbs
  • Fresh thyme, for serving

Instructions

  1. Heat olive oil in a large oven-safe skillet over medium heat. Add thinly sliced sweet onions with salt; sauté until caramelized, about 60-90 minutes.
  2. In another pot, melt unsalted butter over medium heat. Whisk in flour to create a roux; cook until golden.
  3. Gradually whisk in milk, stirring until thickened, about 5-7 minutes. Stir in nutmeg.
  4. Add grated gruyère and parmesan cheese until melted. Fold in caramelized onions and cooked pasta.
  5. Transfer to an oven-safe dish, top with remaining cheese and breadcrumbs, then bake at 375°F (190°C) for 25-30 minutes until golden brown.
