  • 2 tablespoons apple cider vinegar

  • 1/3 cup drained pepperoncini peppers
  • 1/3 cup grated Parmesan cheese
  • 1/2 chopped red onion
  • 19 oz frozen cheese tortellini
  • 1 cup halved grape tomatoes

Instructions

  1. Boil a large pot of salted water and cook the tortellini according to package instructions until al dente (about 4–5 minutes). Drain and let cool.
  2. In a large mixing bowl, whisk together mayonnaise, apple cider vinegar, salt, oregano, Italian herbs, and crushed red pepper until smooth.
  3. Add chopped red onion, pepperoncini peppers, Parmesan cheese, and cooled tortellini to the dressing. Gently mix until well combined.
  4. Fold in halved grape tomatoes.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
