Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together ½ cup softened unsalted butter and ½ cup granulated sugar until light and fluffy.
  3. Add in 1 room temperature egg, 2 teaspoons vanilla extract, and mix until combined.
  4. In another bowl, whisk together 1¾ cups all-purpose flour, ¼ teaspoon baking powder, ¼ teaspoon baking soda, ½ teaspoon cream of tartar, and ¼ teaspoon salt.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Gently fold in ½ cup funfetti sprinkles until evenly distributed.
  7. Scoop tablespoon-sized portions onto prepared baking sheets, spacing them apart. Flatten slightly.
  8. Bake for about 8 minutes or until edges are lightly golden. Cool on the sheet for 5 minutes before transferring to wire racks.
  9. For frosting: beat together ½ cup softened unsalted butter, 1 tablespoon vanilla extract, and gradually add powdered sugar (2½ cups) along with 1 tablespoon heavy cream until creamy.
