1 tablespoon olive oil
1 sweet onion (diced)
6 garlic cloves (minced)
3 to 4 tablespoons minced fresh ginger
Kosher salt and pepper to taste
1 ½ cups cooked shredded chicken
4 cups chicken stock
1 teaspoon freshly grated lime zest
Lime wedges (for serving)
Cilantro (for garnish)
2 cups jasmine rice
3 cups water or chicken stock
1 tablespoon unsalted butter
2 limes (zest freshly grated)
3 tablespoons fresh lime juice
¾ cup chopped cilantro
Instructions
In a large stock pot, heat olive oil over medium-low heat. Add diced sweet onion, minced garlic, and fresh ginger; season with salt and pepper. Sauté until softened.
Stir in shredded chicken and chicken stock, followed by freshly grated lime zest. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 20–30 minutes.
While the soup simmers, rinse jasmine rice under cold water and cook according to package instructions.
Stir in fresh lime juice into the soup before serving.
Serve hot over cilantro lime rice, garnished with chopped cilantro and lime wedges.
