¼ cup raspberries, fresh or thawed frozen
1 small orange, peeled and segmented
1 medium carrot, peeled and chopped
1–2 frozen ripe peaches (about 1½ cups)
1-inch piece fresh ginger, peeled and chopped
½ teaspoon ground turmeric
¼ teaspoon vanilla powder or extract
½ tablespoon fresh lemon juice
¼ cup water
tiny pinch of sea salt and ground black pepper
Instructions
In a small bowl, mash the raspberries with a fork to release their juices; set aside.
In a high-speed blender, combine the orange segments, chopped carrot, frozen peaches, ginger, turmeric, vanilla, lemon juice, salt, pepper, and water. Blend until smooth.
In serving glasses, layer one-third of the peach mixture followed by one-third of the raspberry puree. Repeat until all mixtures are used.
Serve immediately for the best flavor and texture.
