  • ½ cup finely diced sweet gherkins
  • ¾ cup finely diced red bell pepper

  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Cook macaroni noodles in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine cooled macaroni with sweet gherkins, red bell pepper, celery, red onion, and hard-boiled eggs.
  3. In another bowl, whisk together mayonnaise, sour cream, sweet pickle juice, apple cider vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until smooth.
