  • 3 tablespoons water
  • 2 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped parsley
  • 2 teaspoons kosher salt
  • 1 teaspoon lemon zest
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika (sweet or smoked)
  • 3 pounds chicken thighs (bone-in, skin-on)

Instructions

  1. In a medium bowl, whisk together olive oil, water, lemon juice, Dijon mustard, soy sauce, honey, minced garlic, chopped parsley, salt, black pepper, lemon zest, and paprika until well combined.
  2. Place chicken thighs in a resealable bag or baking dish and pour marinade over them. Seal or cover tightly and refrigerate for at least 30 minutes (up to 60 minutes for maximum flavor).
  3. Preheat grill to medium-high heat (375°F – 400°F). Remove chicken from marinade and pat dry.
  4. Grill chicken thighs skin-side down for about 5 minutes until they develop grill marks. Flip and baste with reserved marinade; cook for another 20-25 minutes until internal temperature reaches 165°F.
  5. Remove from the grill and let rest for 5 minutes before serving.
