  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 cup cubed mango (thawed if frozen)
  • 3 tablespoons fresh lime juice (from about 2 limes)
  • 2 tablespoons canola oil
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon Sriracha
  • 3 cloves garlic (minced)
  • 1/2 teaspoon kosher salt
  • Fresh cilantro leaves (for garnish)
  • 1 lime (halved for grilling)

Instructions

  1. In a blender, combine the cubed mango, lime juice, canola oil, fish sauce, brown sugar, Sriracha, minced garlic, and kosher salt. Blend until smooth.
  2. Transfer the marinade into a large Ziploc bag and add the chicken thighs. Seal tightly and massage the bag to coat the chicken evenly. Refrigerate for at least 4 hours or overnight.
  3. Preheat your grill to medium heat.
  4. Remove excess marinade from the chicken and place it on the hot grill. Grill for about 10 minutes without flipping.
  5. Flip the chicken and spoon over some reserved marinade. Grill for another 10 minutes or until internal temperature reaches 165°F.
  6. While grilling, place lime halves cut side down on the grill until caramelized.
  7. Remove chicken from the grill and let rest for about five minutes before serving with cilantro garnish and grilled lime.
