  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 can (28 ounces) diced tomatoes (drained)
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice zucchini into half-inch rounds; sprinkle with salt and let sit in a colander for 15 minutes to drain excess moisture. Rinse and pat dry.
  3. Heat olive oil in a large skillet over medium-high heat. Sauté diced onion for about 2 minutes until softened, then add minced garlic for another 30 seconds.
  4. Add ground beef to the skillet; cook until browned and cooked through (about 5 minutes). Drain excess fat if necessary.
  5. Stir in drained diced tomatoes, Italian seasoning, salt, and black pepper; simmer for about 5 minutes.
  6. In a greased baking dish, layer half of the meat mixture, half of zucchini slices, and half of the mozzarella cheese. Repeat layers with remaining ingredients.
  7. Bake in preheated oven for 20-25 minutes until cheese is bubbly and golden brown.
