  • 2 pounds boneless beef chuck, chopped
  • 4 cups low sodium chicken broth
  • 3 sticks celery, chopped
  • 3 large carrots, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 large potatoes or parsnips, diced
  • 1 turnip, diced
  • 3 ounces tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon cornstarch (optional for thickening)
  • 1½ cups self-rising flour (for dumplings)
  • ¾ cup shredded Irish sharp cheddar cheese

Instructions

  1. Heat a large oven-safe pot over medium heat. Brown the beef chunks until golden on all sides. Remove and set aside.
  2. In the same pot, sauté the onion, celery, carrots until softened. Add garlic and tomato paste; cook for an additional two minutes.
  3. Pour in the chicken broth and Worcestershire sauce; bring to a simmer.
  4. Return the browned beef to the pot along with diced potatoes or parsnips and turnip. Simmer covered for about an hour.
  5. For dumplings, mix flour with cheddar cheese and shortening until crumbly. Stir in milk and herbs until just combined.
  6. Form dumplings and place them on top of the stew. Bake uncovered at 350°F for about 30-40 minutes until golden.
