  • 20 ounces cheese tortellini
  • 1 cup diced chicken
  • 1 cup pineapple tidbits, well-drained
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/2 cup teriyaki sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar

Instructions

  1. Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions until al dente (about 3–5 minutes). Drain and rinse under cold water.
  2. In a medium bowl, whisk together the teriyaki sauce, honey, garlic powder, mayonnaise, and apple cider vinegar until smooth.
  3. In a large mixing bowl, combine the cooled tortellini, diced chicken, pineapple tidbits, green and red bell peppers, and red onion.
  4. Pour half of the dressing over the salad and gently fold until everything is coated evenly. Add more dressing if desired.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving for optimal flavor blending.
