4 slices sourdough bread
1 cup shredded white cheddar cheese
1 medium ripe peach, sliced
2 tablespoons honey
2 tablespoons unsalted butter (softened)
Pinch of salt (optional)
Instructions
Preheat a skillet over medium heat.
Spread softened butter on one side of each slice of sourdough bread.
Place two unbuttered slices in the skillet and layer half the shredded cheese on each slice.
Top with peach slices, drizzle honey over them, and add a pinch of salt if desired.
Sprinkle remaining cheese on top and close the sandwiches with the other buttered slices facing out.
Cook for about 3-5 minutes until golden brown; flip and cook the other side for another 3-5 minutes until crispy and cheese is melted.
Let cool slightly before slicing diagonally and serving.
