  • 1 to 1.5 lb thinly sliced sirloin steak
  • 1 cup baby spinach
  • 2 oz queso fresco (crumbled)
  • 1 tsp steak spice blend
  • Salt and ground white pepper (to taste)
  • 1/2 cup plain unsweetened Greek yogurt
  • 1/4 cup fresh cilantro (chopped)
  • 1 tbsp lime juice & zest

Instructions

  1. Preheat your grill or oven broiler.
  2. Roast the hatch chiles until their skins blister; let cool in a sealed bag before peeling.
  3. In a bowl, mix crumbled queso fresco, baby spinach, steak spice blend, salt, and pepper.
  4. Lay out sirloin slices, place filling on each slice, add roasted chile, and roll tightly.
  5. Grill the roll-ups over medium-high heat for about 10-12 minutes until browned.
