  • 2 lemons (juiced)
  • 1 lemon (zested)
  • ¼ cup extra virgin olive oil
  • ¼ teaspoon coarse kosher salt
  • ¼ teaspoon black ground pepper
  • 2 romaine hearts (chopped)
  • 3 cups iceberg lettuce (chopped)
  • 1 cup parmesan cheese (grated or shredded, divided)
  • 2 shallots (sliced)
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. In a medium mixing bowl, whisk together the lemon juice, lemon zest, extra virgin olive oil, kosher salt, black pepper, and optional red pepper flakes.
  2. Wash and dry the romaine hearts and iceberg lettuce thoroughly. Chop them into bite-sized pieces and place them in a large mixing bowl.
  3. Add sliced shallots and most of the grated parmesan cheese to the greens. Reserve some cheese for garnish.
  4. Drizzle the dressing over the salad and toss gently until all ingredients are well coated.
  5. Serve immediately, garnished with the reserved parmesan cheese and additional cracked black pepper.
