  • 1 head cauliflower (steamed or 6 cups Steamed Cauliflower Rice)
  • 1 cup shredded cheddar cheese (divided)
  • 1/2 cup sour cream
  • 2 teaspoons dry ranch seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 4 tablespoons turkey bacon bits (divided)
  • 1/4 cup whole whipping cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Steam the cauliflower until fork-tender. If using riced cauliflower, steam until tender.
  3. In a large mixing bowl, mash the steamed cauliflower until smooth, then mix in sour cream, half of the cheddar cheese, ranch seasoning, onion powder, garlic powder, and three tablespoons of turkey bacon bits until well combined.
  4. Transfer the mixture to a small baking dish and spread evenly.
  5. Bake for 35 minutes until bubbly and golden at the edges.
  6. Sprinkle remaining cheddar cheese and turkey bacon bits on top; return to oven for an additional 5-10 minutes until cheese is melted.
