  • 1 cup Cottage Cheese
  • 1/4 cup Mayonnaise (or additional cottage cheese)
  • 2 Celery Stalks (diced)
  • 2 Green Onions (sliced)
  • 1/2 cup Blackberries (sliced)
  • 1/2 tsp Salt and Pepper
  • 1/4 cup Chopped Walnuts

Instructions

  1. Cook the chicken breasts by boiling, grilling, or baking until they reach an internal temperature of 165°F (75°C). Shred once cooled.
  2. Dice the celery and slice the green onions.
  3. In a large mixing bowl, combine shredded chicken, celery, green onions, blackberries, and walnuts.
  4. Add cottage cheese and mayonnaise (if using) to the bowl and gently fold until well mixed.
  5. Season with salt and pepper; adjust to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
