- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 ripe mango, peeled and diced
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1-inch piece ginger, grated
- 1 cup coconut milk
- 2 tablespoons curry powder
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon chili powder
- Fresh cilantro leaves for garnish
- Heat vegetable oil in a large skillet over medium heat. Add chopped onion and sauté until softened (about 3–4 minutes).
- Stir in minced garlic and grated ginger; cook for another minute until fragrant.
- Add curry powder, ground turmeric, and chili powder; stir well to bloom the spices.
- Incorporate chicken pieces into the skillet. Cook until slightly browned on all sides (5–6 minutes).
- Pour in coconut milk and salt; stir well to combine. Bring to a gentle simmer.
- Gently fold in diced mango; allow to warm through for about 3–4 minutes without overcooking.
- Garnish with fresh cilantro before serving.
