  • 1 ripe mango, peeled and diced
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 1 cup coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add chopped onion and sauté until softened (about 3–4 minutes).
  2. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  3. Add curry powder, ground turmeric, and chili powder; stir well to bloom the spices.
  4. Incorporate chicken pieces into the skillet. Cook until slightly browned on all sides (5–6 minutes).
  5. Pour in coconut milk and salt; stir well to combine. Bring to a gentle simmer.
  6. Gently fold in diced mango; allow to warm through for about 3–4 minutes without overcooking.
  7. Garnish with fresh cilantro before serving.
