2 (15-ounce) cans white beans (drained and rinsed)
½ cup chopped fresh herbs (parsley, cilantro, basil, dill, etc.)
2 roasted red peppers (finely diced)
⅓ cup finely diced shallot
2 garlic cloves (minced)
½ cup extra-virgin olive oil
1 lemon (zested and juiced)
½ teaspoon kosher salt
¼ teaspoon red pepper flakes
Ground black pepper (to taste)
Instructions
In a large mixing bowl, combine the drained and rinsed white beans with the chopped fresh herbs, roasted red peppers, shallots, and minced garlic.
Add the extra-virgin olive oil, lemon juice and zest, salt, red pepper flakes, and ground black pepper. Gently fold all ingredients together until well mixed.
Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least two hours or overnight for best flavor.
