  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 45 portions of pasta (spaghetti or linguine)
  • 2 tbsp salted butter
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried sage
  • 1/2 tsp crushed red pepper flakes
  • 1/2 cup canned pumpkin purée
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup grated Mozzarella
  • Chopped fresh parsley or micro greens for garnish

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden brown and cooked through (165°F). Remove from heat.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth, dried herbs, and crushed red pepper flakes; simmer for a few minutes.
  3. Stir in pumpkin purée and heavy cream; allow to simmer gently for about 5 minutes until well combined.
  4. Cook pasta according to package instructions until al dente. Drain and combine with the sauce.
  5. Fold in grated cheeses until melted and well mixed. Serve topped with sliced chicken and garnish with fresh herbs.
