  • 1 lb ground chicken
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • Salt
  • Pepper
  • Paprika
  • Cumin
  • Oregano

Instructions

  1. In a skillet over medium heat, sauté the diced onion in 1 tablespoon of olive oil until translucent (about 5 minutes). Add minced garlic and cook for another 30 seconds.
  2. In a large mixing bowl, combine the sautéed onion and garlic with ground chicken, spinach, breadcrumbs, Greek yogurt, dill, lemon juice, and spices. Mix until well combined.
  3. Shape the mixture into patties about ½ inch thick.
  4. Heat remaining olive oil in the skillet over medium heat. Cook patties for about 5-6 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F).
  5. Allow to rest on paper towels before serving.
