  • 1 lb boneless skinless chicken breast
  • 2 cups mushrooms (cremini or button)
  • 1 clove garlic (minced)
  • 3 sprigs thyme
  • 1 1/2 cups dry white grape juice
  • 1/2 cup seasoned flour
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • Salt and pepper to taste

Instructions

  1. Pound the chicken breasts between wax paper until about ¼ inch thick, then cut into serving-sized pieces.
  2. Heat butter and olive oil in a skillet over medium heat. Dredge chicken in seasoned flour and sauté until golden brown on both sides; remove from pan.
  3. In the same skillet, sauté mushrooms and garlic until browned. Deglaze with grape juice while scraping up bits from the bottom.
  4. Add thyme, return chicken to the skillet, cover, and simmer for 15-20 minutes until cooked through.
  5. Remove chicken, stir in heavy cream and asiago cheese into the sauce until smooth. Return chicken to coat with sauce before serving.
