  • 2/3 cup all-purpose flour
  • 2 tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup packed brown sugar
  • 1/2 cup butter (melted and slightly cooled)
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 1/2 cups grated zucchini
  • 1 1/2 cups semi-sweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together quick oats, all-purpose flour, cocoa powder, baking soda, salt, cinnamon, and brown sugar until well combined.
  3. In a separate bowl, mix melted butter, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture along with grated zucchini and one cup of chocolate chips. Stir gently until fully incorporated.
  5. Using rounded tablespoonfuls of dough, drop onto prepared baking sheets and flatten slightly.
  6. Press additional chocolate chips on top of each cookie dough ball.
  7. Bake for 12-15 minutes or until edges are golden brown and centers are set but soft. Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
