  • 2/3 cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp grated lemon zest
  • 1/4 cup sour cream
  • 1.5 peaches, sliced thin
  • Almond flakes for topping
  • Powdered sugar for finishing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together almond flour, baking powder, cinnamon, and salt; set aside.
  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and lemon zest.
  4. Gradually fold the dry mixture into the wet ingredients, followed by sour cream until just combined.
  5. Pour batter into the prepared pan and arrange peach slices on top. Sprinkle with almond flakes.
  6. Bake for 45–50 minutes or until a toothpick comes out clean.
  7. Allow to cool before dusting with powdered sugar.
