  • 3 cups chopped peaches (about 45 large peaches)
  • 1/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons cornstarch
  • 3/4 cup flour (for crumble topping)
  • 1/4 cup large flake oats
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup unsalted butter, melted (for crumble topping)
  • 1 cup powdered sugar (for glaze)
  • 1/2 teaspoon vanilla extract
  • 45 tablespoons cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, powdered sugar, and salt. Stir in melted butter until combined.
  3. Press the mixture evenly into the bottom of the prepared pan and bake for about 15 minutes until lightly golden.
  4. In another bowl, toss chopped peaches with granulated sugar, lemon juice, and cornstarch until well coated.
  5. Spread the peach mixture evenly over the baked shortbread base.
  6. For the crumble topping, mix together flour, oats, brown sugar, cinnamon in a bowl. Drizzle in melted butter and combine until crumbly.
  7. Sprinkle the crumble mixture over the peaches and bake for an additional 35–45 minutes until golden brown.
  8. Let cool completely before drizzling with a glaze made from powdered sugar mixed with vanilla and cream.
