  • 2 1/2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups cold unsalted butter
  • 1/4 cup dark brown sugar
  • 5 cups pitted and chopped peaches
  • 6 tablespoons heavy cream
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (180°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. In a food processor, combine flour, granulated sugar, and salt. Add cubed butter and pulse until crumbly.
  3. Set aside about 1½ cups of crumb mixture for topping. Press remaining crumbs into the bottom of the prepared pan and bake for 15 minutes.
  4. Meanwhile, mix peaches with granulated sugar, flour, cinnamon, and salt in a bowl. Stir in heavy cream (and vanilla if using).
  5. Pour peach filling over baked crust and sprinkle reserved crumb topping evenly on top.
  6. Bake for an additional 45 minutes until topping is golden brown and juices are bubbling.
  7. Allow to cool completely before slicing into bars.
