  • ½ cup white crab meat
  • 1 tsp Dijon mustard
  • 2 tablespoons finely chopped red pepper
  • 1 tablespoon finely chopped celery
  • 2 tablespoons crème fraîche or sour cream (low fat is fine)
  • Salt and pepper to taste
  • 4 slices Monterey Jack cheese or Swiss cheese (or use Pepper Jack if you like a bit of spice)
  • A four or five inch slice of baguette or 2 or 3 pieces of sliced bread

Instructions

  1. Preheat your oven to 350°F (175°C). Toast slices of bread on a baking sheet for about 5 minutes until golden.
  2. In a mixing bowl, combine crab meat, Dijon mustard, red pepper, celery, and crème fraîche. Season with salt and pepper; mix gently.
  3. Spread the crab mixture evenly over the toasted bread slices.
  4. Top each slice with cheese and return to the oven for 5-10 minutes until the cheese is bubbly and golden brown.
