  • 2 cups cooked jasmine rice (preferably day-old)
  • 3 tbsp sesame oil
  • 2 tbsp peanut butter or tahini
  • 2 tbsp soy sauce or tamari
  • 2 tbsp rice vinegar
  • 2 tbsp lime juice
  • 3 cups shredded cabbage (mix of green and red)
  • 1 cup sliced cucumber
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, grated or julienned
  • 1/2 cup chopped sugar snap peas
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the day-old jasmine rice and spread it evenly. Cook undisturbed for about 6-8 minutes until golden brown and crispy.
  2. In a mixing bowl, whisk together the remaining sesame oil, peanut butter (or tahini), soy sauce (or tamari), rice vinegar, lime juice, honey, ginger, and chili crisp until smooth.
  3. In a large bowl, combine shredded cabbage, cucumber, red bell pepper, carrot, sugar snap peas, and green onions.
  4. Add the crispy rice to the vegetable medley and drizzle with the peanut sesame dressing. Toss gently to combine.
  5. Chill for at least 15 minutes before serving to allow flavors to meld.
