  • 1 cup plain Greek yogurt
  • 1 1/2 cups raspberries (frozen preferred)
  • For frosting: 1 cup unsalted butter (room temperature), 5 cups confectioner's sugar, 4 Tbsp fresh lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. Cream together the unsalted butter and sugar until light and fluffy.
  3. Beat in egg yolks, lemon zest, and vanilla until smooth.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the creamed mixture alternating with yogurt until just combined.
  5. In another bowl, whip egg whites until soft peaks form. Fold gently into the batter along with the raspberries.
  6. Pour batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  8. For frosting: Beat butter until creamy; gradually add confectioner's sugar and lemon juice until smooth.
  9. Assemble the cake by spreading frosting between layers and on top.
