  • 2 whole red bell peppers
  • 2 tablespoons olive oil
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup fat-free half & half
  • 4 oz garlic & herb goat cheese
  • 2/3 cup grated Parmigiano Reggiano cheese
  • 1/2 lb linguine (cooked to al dente)
  • Salt & pepper (to taste)

Instructions

  1. Preheat the oven to 500°F. Place whole red bell peppers on a baking sheet and roast for 20–30 minutes until charred. Cover with foil to steam.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onion for about 7 minutes until softened, then add minced garlic and cook for another minute.
  3. Stir in fat-free half & half and crumbled goat cheese; mix gently over low heat until melted.
  4. Peel and chop roasted peppers, then add to the skillet along with grated Parmigiano Reggiano; stir until combined.
  5. Toss the prepared sauce with cooked linguine until well coated.
