- 2.5 tbsp unsalted butter
- 1 large onion (diced)
- 4 carrots (peeled and sliced)
- 2 celery stalks (diced)
- 1.25 cups leeks (white and light green parts only)
- 4 garlic cloves (minced)
- 4 cups chicken broth
- 2.25 lb potatoes (peeled and cut into cubes)
- 2 bay leaves
- 2 tsp marjoram (dried)
- Salt and pepper to taste
- 0.5 tsp nutmeg
- 0.5 cup half-and-half
- 1/4 cup parsley (chopped for garnish)
- In a large pot over medium heat, melt the butter and add the sausage pieces. Cook until browned.
- Add the diced onion, carrots, and celery; sauté until soft.
- Stir in leeks and garlic; cook until fragrant.
- Pour in chicken broth and add cubed potatoes along with bay leaves, marjoram, salt, pepper, and nutmeg.
- Simmer until potatoes are tender, then stir in half-and-half and remove bay leaves.
- Garnish with fresh parsley before serving.
