  • 2.5 tbsp unsalted butter
  • 1 large onion (diced)
  • 4 carrots (peeled and sliced)
  • 2 celery stalks (diced)
  • 1.25 cups leeks (white and light green parts only)
  • 4 garlic cloves (minced)
  • 4 cups chicken broth
  • 2.25 lb potatoes (peeled and cut into cubes)
  • 2 bay leaves
  • 2 tsp marjoram (dried)
  • Salt and pepper to taste
  • 0.5 tsp nutmeg
  • 0.5 cup half-and-half
  • 1/4 cup parsley (chopped for garnish)

Instructions

  1. In a large pot over medium heat, melt the butter and add the sausage pieces. Cook until browned.
  2. Add the diced onion, carrots, and celery; sauté until soft.
  3. Stir in leeks and garlic; cook until fragrant.
  4. Pour in chicken broth and add cubed potatoes along with bay leaves, marjoram, salt, pepper, and nutmeg.
  5. Simmer until potatoes are tender, then stir in half-and-half and remove bay leaves.
  6. Garnish with fresh parsley before serving.
