  • 2 1/2 tsp kosher salt
  • 1 1/2 tsp freshly ground black pepper
  • 1 tbsp smoked paprika
  • 2 large yellow onions, thinly sliced
  • 6 cloves garlic, smashed
  • 1 1/2 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce (gluten-free if needed)
  • 2 tbsp apple cider vinegar

Instructions

  1. Pat the brisket dry with paper towels and season generously on both sides with salt, pepper, smoked paprika, garlic powder, onion powder, cumin, chili powder, and thyme.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the brisket on each side for about 3–4 minutes until browned.
  3. Remove the brisket from the skillet and sauté sliced onions until softened; add smashed garlic for another minute.
  4. Pour in the broth, tomato paste, Worcestershire sauce, and apple cider vinegar; stir to combine.
  5. Place the brisket back into the slow cooker or Dutch oven; cover and cook on low for 8–10 hours or until fork-tender.
  6. Let the brisket rest for at least 20 minutes before slicing against the grain. Strain cooking liquid and simmer until thickened for gravy.
