  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (125g each), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 tablespoons basil pesto
  • Butter (as required)

Instructions

  1. Preheat a skillet over medium heat.
  2. Butter one side of each slice of sourdough bread.
  3. Lay four slices butter-side down and spread 1 tablespoon of pesto on each.
  4. Layer mozzarella slices and chopped sun-dried tomatoes on top, then cover with another slice of bread (butter-side up).
  5. Grill sandwiches for about 4 minutes on each side until golden brown and crispy.
  6. Allow to rest for a minute before slicing and serving.
