- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 large jalapeños, seeds removed and diced
- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup heavy cream (can substitute half with low-fat milk for a lighter version)
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
- In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent.
- Add minced garlic and diced jalapeños; cook until fragrant.
- Stir in chicken breasts, cooking until no longer pink.
- Pour in chicken broth and bring to a simmer. Cook for about 15 minutes until chicken is cooked through.
- Remove chicken, shred it, then return to the pot.
- Stir in heavy cream, cream cheese, shredded cheddar cheese, cumin, paprika, salt, and pepper until well combined.
- Simmer on low for 5 more minutes to meld flavors.
- Serve hot with fresh cilantro as garnish.
