  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 large jalapeños, seeds removed and diced
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream (can substitute half with low-fat milk for a lighter version)
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent.
  2. Add minced garlic and diced jalapeños; cook until fragrant.
  3. Stir in chicken breasts, cooking until no longer pink.
  4. Pour in chicken broth and bring to a simmer. Cook for about 15 minutes until chicken is cooked through.
  5. Remove chicken, shred it, then return to the pot.
  6. Stir in heavy cream, cream cheese, shredded cheddar cheese, cumin, paprika, salt, and pepper until well combined.
  7. Simmer on low for 5 more minutes to meld flavors.
  8. Serve hot with fresh cilantro as garnish.
