  • 2 cups fresh pineapple, diced
  • 3 jalapeños, seeded and chopped
  • 1 small red onion, finely chopped
  • 2 tablespoons grated ginger
  • 1/2 cup brown sugar (or coconut sugar)
  • 1/2 cup apple cider vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil

Instructions

  1. In a medium saucepan over medium heat, add olive oil. Once shimmering, sauté finely chopped onion and grated ginger until onions are translucent.
  2. Stir in diced pineapple, chopped jalapeños, brown sugar, apple cider vinegar, ground cumin, salt, and black pepper.
  3. Bring to a gentle simmer and cook for about 20 minutes while stirring occasionally until thickened.
  4. Remove from heat and stir in lime juice.
  5. Allow to cool slightly before transferring to airtight jars. Refrigerate for at least one hour before serving.
