- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar (plus more for rice)
- 2 teaspoons sugar
- 1 tablespoon sesame oil
- 2 tablespoons sriracha sauce
- ½ cup mayonnaise (or avocado mayo)
- 1 cup sushi rice
- 1 ½ cups water
- 1 tablespoon rice vinegar (for rice)
- ½ teaspoon salt
- 1 avocado, sliced
- 1 small cucumber, julienned
- 1 tablespoon sesame seeds (optional, for garnish)
- Fresh cilantro or green onions (optional, for garnish)
- Rinse sushi rice under cold water until clear. Cook rice with water in a medium pot according to package instructions.
- In a large skillet, heat olive oil over medium-high heat. Sauté shrimp until golden and opaque, about 2-3 minutes per side.
- Mix soy sauce, rice vinegar, sesame oil, sugar, and sriracha in a bowl. Toss cooked shrimp in this mixture and cook for another minute to coat.
- Pack cooked sushi rice into molds or bowls as the base layer. Add shrimp on top followed by slices of avocado and cucumber.
- Garnish with sesame seeds and herbs if desired before serving.
