  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar (plus more for rice)
  • 2 teaspoons sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons sriracha sauce
  • ½ cup mayonnaise (or avocado mayo)
  • 1 cup sushi rice
  • 1 ½ cups water
  • 1 tablespoon rice vinegar (for rice)
  • ½ teaspoon salt
  • 1 avocado, sliced
  • 1 small cucumber, julienned
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Fresh cilantro or green onions (optional, for garnish)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook rice with water in a medium pot according to package instructions.
  2. In a large skillet, heat olive oil over medium-high heat. Sauté shrimp until golden and opaque, about 2-3 minutes per side.
  3. Mix soy sauce, rice vinegar, sesame oil, sugar, and sriracha in a bowl. Toss cooked shrimp in this mixture and cook for another minute to coat.
  4. Pack cooked sushi rice into molds or bowls as the base layer. Add shrimp on top followed by slices of avocado and cucumber.
  5. Garnish with sesame seeds and herbs if desired before serving.
