  • 3.5 cups corn (fresh, canned, or frozen)
  • 1/2 large red bell pepper (diced)
  • 2 fresh jalapeño peppers (diced)
  • 34 tbsp diced pickled jalapeño peppers
  • 2.5 tbsp butter
  • 4 oz cream cheese
  • 1/4 tsp paprika
  • 1 cup freshly grated sharp cheddar cheese
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using frozen corn, thaw completely.
  3. Dice the red bell pepper and jalapeños, removing seeds for less heat.
  4. In a medium saucepan over medium heat, melt the butter and cream cheese until smooth.
  5. Stir in corn, red bell pepper, fresh jalapeños, pickled jalapeños, paprika, salt, and pepper.
  6. Fold in half of the cheddar cheese until melted and well combined.
  7. Pour the mixture into a greased casserole dish and top with remaining cheddar cheese.
  8. Bake for 15-20 minutes until bubbly and golden brown.
