  • 3 pounds chuck beef (cut into 1-inch cubes)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon browning sauce (optional)
  • 8 cloves garlic (minced)
  • 2 stalks celery (chopped)
  • 4 large carrots (roughly chopped)
  • 3 medium Yukon gold potatoes (cut into cubes)
  • 4 cups beef stock
  • 2/3 cup red cooking apple vinegar
  • Fresh herbs (rosemary & thyme)

Instructions

  1. Season the beef cubes with flour, soy sauce or coconut aminos, browning sauce (if using), garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. In a Dutch oven over medium-high heat, add vegetable oil and sear the beef until browned on all sides. Remove from pot.
  3. Sauté celery, onion, and garlic in the same pot until softened.
  4. Stir in tomato paste and roast beef base; cook for a few minutes.
  5. Add beef stock and red cooking apple vinegar; return seared beef to the pot.
  6. Add fresh herbs and cover; simmer on low heat for about 2 hours.
  7. After 2 hours, add chopped potatoes and carrots; continue cooking for an additional 30 to 45 minutes until vegetables are tender.
