  • 2 medium butternut squash
  • 2 cups cooked chicken, shredded
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp ground cinnamon
  • Salt and black pepper to taste
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Halve the butternut squash lengthwise and scoop out the seeds. Brush cut sides with olive oil, drizzle honey, and sprinkle with cinnamon, salt, and pepper.
  2. Place squash cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  3. Meanwhile, sauté onion in olive oil until translucent; add minced garlic.
  4. In a mixing bowl, combine shredded chicken with chicken broth, sautéed onion and garlic, Parmesan cheese, salt, and pepper. Mix well.
  5. Gently scoop out some flesh from the roasted squash and stir into the chicken mixture.
  6. Fill each squash half generously with the stuffing mix. Drizzle additional honey on top.
  7. Return stuffed squash to oven for another 15 minutes until golden.
  8. Let rest for five minutes before serving.
