12 large fresh mushrooms
3 tablespoons melted butter
1/4 cup finely shredded mozzarella cheese
1 can minced clams, drained (6 oz)
1 finely chopped green onion
1 large beaten egg
2 teaspoons minced garlic
1/2 cup Italian-style bread crumbs
1 teaspoon dried oregano
3 tablespoons grated parmesan cheese
Instructions
Preheat your oven to 375°F (190°C).
Clean the mushrooms gently with a damp cloth and remove the stems.
In a mixing bowl, combine melted butter, mozzarella cheese, minced clams, green onion, beaten egg, garlic, bread crumbs, oregano, and half the parmesan cheese.
Stuff each mushroom cap generously with the filling mixture.
Arrange the stuffed mushrooms on a baking sheet and drizzle with additional melted butter. Top with remaining parmesan cheese.
Bake for 20–25 minutes until golden brown and bubbly.
