  • 2.5 lbs chicken thighs
  • 1 tbsp cilantro (chopped)
  • 2 tbsp Thai sweet chili sauce
  • 1/4 cup fish sauce
  • 1 tbsp soy sauce
  • 3 tbsp vegetable oil
  • 3 tbsp brown sugar
  • 3 tbsp lime juice
  • 34 cloves garlic (minced)
  • 1 inch ginger root (peeled and minced)
  • 1/2 shallots (minced)
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. In a blender or food processor, combine cilantro, sweet chili sauce, fish sauce, soy sauce, vegetable oil, brown sugar, lime juice, garlic, ginger, shallots, and red pepper flakes. Blend until smooth.
  2. Place chicken thighs in a resealable plastic bag or shallow dish and pour marinade over them. Seal the bag or cover the dish, ensuring chicken is well coated. Marinate in the refrigerator for at least 4 hours (up to 24 hours for deeper flavor).
  3. Preheat grill or skillet over medium-high heat.
  4. Remove excess marinade from chicken and place on the hot grill or skillet skin-side down. Cook for about 6–7 minutes without moving.
  5. Flip the chicken and cook until internal temperature reaches 165°F (about another 6–7 minutes).
  6. Let the chicken rest for 5–10 minutes before serving garnished with fresh cilantro.
