  • 1 tbsp peanut or coconut oil
  • 1 1/2 lb boneless, skinless chicken breast (cut into quarters)
  • 1 tsp salt
  • 1 onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp fresh ginger (minced)
  • 1 398 ml can California cling peach slices
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp Thai chili sauce
  • Juice of one lime
  • 1 tsp dried lemongrass
  • 1 tbsp cornstarch
  • 1 red bell pepper (cored and thinly sliced)
  • 1/4 cup chopped peanuts
  • 2 tbsp fresh cilantro (chopped or use parsley or basil)

Instructions

  1. Heat oil in a large skillet over medium-high heat. Season quartered chicken with salt and sear for about 3 minutes on each side until golden brown. Remove from skillet.
  2. In the same skillet, add sliced onion, minced garlic, and fresh ginger. Sauté for about 3 minutes until softened.
  3. Drain peaches, reserving juice. Whisk together peach juice, honey, soy sauce, rice vinegar, Thai chili sauce, lime juice, dried lemongrass, and cornstarch until smooth.
  4. Add seared chicken back to the skillet along with sliced bell pepper and peach slices. Pour sauce over everything and stir gently.
  5. Simmer for about 5 minutes until the sauce thickens and bubbles.
  6. Garnish with chopped peanuts and fresh herbs before serving over rice or noodles.
