  • 3 eggs
  • 1 ¼ cups granulated white sugar
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon cream of tartar
  • 1 teaspoon salt
  • 2 cups grated zucchini (wet)
  • ½ cup granulated white sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 4½" x 8½" loaf pans.
  2. In a large bowl, mix melted coconut oil, eggs, sugar, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, cinnamon, baking soda, cream of tartar, and salt.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined.
  5. Gently fold in grated zucchini until evenly distributed.
  6. Pour half the batter into each prepared loaf pan and sprinkle with half of the cinnamon-sugar mixture over each loaf.
  7. Top with remaining batter and finish with the rest of the cinnamon-sugar mixture.
  8. Bake for about 45-50 minutes or until a toothpick inserted comes out clean.
  9. Cool completely on a wire rack before slicing.
