  • 1 large lemon, cut into chunks (rind included)
  • ½ cup olive oil, divided, plus extra for drizzling
  • 5 large garlic cloves
  • 8 oz. block feta cheese
  • 8 oz. block cream cheese (or ricotta)
  • ¼ cup honey, plus extra for drizzling
  • 1 tsp. red pepper flakes, plus more for garnish
  • 1 tsp. fresh thyme, plus more for garnish
  • 1 tsp. fresh oregano, plus more for garnish
  • Optional garnish: sliced lemon, Kalamata olives
  • Serve with: toasted baguette, pita bread, cucumber, or carrots

Instructions

  1. Preheat oven to 400°F (200°C). On a baking sheet lined with parchment paper, place lemon chunks and garlic cloves in a ramekin drizzled with olive oil.
  2. Roast for about 15 minutes until golden brown and fragrant.
  3. In a food processor, combine feta cheese, cream cheese (or ricotta), remaining olive oil, honey, red pepper flakes, thyme, oregano, and roasted garlic and lemon.
  4. Blend until smooth and creamy; adjust seasoning as desired.
  5. Transfer to a serving dish and garnish with Kalamata olives and fresh herbs if desired.
