  • 1 large sweet potato (about 12 ounces), diced
  • 1 lb flat iron steak, diced
  • 3 tbsp olive oil (divided)
  • 2 cloves garlic, minced
  • 2 bell peppers (diced)
  • 4 green onions (sliced)
  • 2 tbsp coconut aminos
  • Sea salt and cracked black pepper to taste

Instructions

  1. Microwave diced sweet potato for 4–6 minutes until barely tender.
  2. Heat 2 tablespoons of olive oil in a skillet over high heat. Add steak and cook for about 10 minutes until browned.
  3. Remove steak and set aside. In the same skillet, add another tablespoon of olive oil, sauté sweet potatoes for about 3–4 minutes until golden.
  4. Stir in garlic, then add bell peppers and green onions; cook for an additional 3–4 minutes until tender.
  5. Return steak to the skillet along with coconut aminos; toss everything together for another minute before serving.
