- 1 large sweet potato (about 12 ounces), diced
- 1 lb flat iron steak, diced
- 3 tbsp olive oil (divided)
- 2 cloves garlic, minced
- 2 bell peppers (diced)
- 4 green onions (sliced)
- 2 tbsp coconut aminos
- Sea salt and cracked black pepper to taste
- Microwave diced sweet potato for 4–6 minutes until barely tender.
- Heat 2 tablespoons of olive oil in a skillet over high heat. Add steak and cook for about 10 minutes until browned.
- Remove steak and set aside. In the same skillet, add another tablespoon of olive oil, sauté sweet potatoes for about 3–4 minutes until golden.
- Stir in garlic, then add bell peppers and green onions; cook for an additional 3–4 minutes until tender.
- Return steak to the skillet along with coconut aminos; toss everything together for another minute before serving.
