- Place sliced potatoes in a bowl. Pour pickle juice over potatoes, add 1 tablespoon dill, and stir to coat. Allow them to marinate for about 1 hour.
- After marinating, drain the potatoes and pat them dry with paper towels. Toss them in a bowl with olive oil, salt, garlic powder, cayenne pepper, and remaining dill.
- Arrange potatoes in a single layer in the air fryer basket. Air fry at 325°F (163°C) for about 20 minutes, tossing every 5-7 minutes until golden brown and crispy.
- Serve hot with Greek Yogurt Ranch Dip if desired.
