Ingredients
  

  • 1 medium russet potato about 10 ounces, thinly sliced
  • 1 jar pickle juice from a 16-ounce jar
  • 1 tablespoon dried dill plus 1 teaspoon, divided
  • 1.5 teaspoons extra virgin olive oil
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon cayenne pepper increase for more heat
  • 1 serving Greek Yogurt Ranch Dip for serving (optional)

Method
 

  1. Place sliced potatoes in a bowl. Pour pickle juice over potatoes, add 1 tablespoon dill, and stir to coat. Allow them to marinate for about 1 hour.
  2. After marinating, drain the potatoes and pat them dry with paper towels. Toss them in a bowl with olive oil, salt, garlic powder, cayenne pepper, and remaining dill.
  3. Arrange potatoes in a single layer in the air fryer basket. Air fry at 325°F (163°C) for about 20 minutes, tossing every 5-7 minutes until golden brown and crispy.
  4. Serve hot with Greek Yogurt Ranch Dip if desired.
