Preheat your air fryer to 375°F (190°C).
In a small bowl, mix together olive oil, soy sauce, sweet chili sauce, rice vinegar, garlic powder, ginger, and honey if you choose.
Season your chicken breasts generously with salt and pepper. Then coat them evenly with your sweet chili mixture.
Place the coated chicken breasts into your air fryer basket. Cook them for about 12-15 minutes, flipping halfway through.
While your chicken is cooking, season the halved Brussels sprouts with olive oil, salt, and pepper.
Add your seasoned Brussels sprouts into the air fryer basket alongside your chicken or cook them separately after removing the chicken. Cook for about 8–10 minutes until crispy and golden brown.
Once everything has cooked perfectly, allow your chicken to rest for a few moments before slicing it up. Serve alongside your crunchy Brussels sprouts.
