Method
Prepare the Pastry
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface and cut into 4 squares.
- Place the squares on a baking sheet lined with parchment paper.
- Beat the egg and brush it over the pastry squares.
- Bake for 15-20 minutes or until golden brown.
Make the Crema Pasticcera
- In a saucepan, heat the milk over medium heat until it just begins to simmer.
- In a mixing bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
- Slowly pour the hot milk into the egg mixture while whisking continuously.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened.
- Remove from heat and stir in the vanilla extract. Let cool.
Assemble the Pastry
- Once the pastry is baked and cooled, cut a slit in the top of each pastry to create a pocket.
- Fill each pastry with the cooled crema pasticcera.
- Top with mixed berries.
- Serve immediately or chill in the refrigerator before serving.
