Ingredients
  

Salad Ingredients
  • 2 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup red bell pepper sliced
  • 1 lb chicken breast grilled and sliced
  • 1/4 cup red onion thinly sliced
Mango Dressing
  • 1 ripe mango peeled and diced
  • 2 tablespoons honey
  • 2 tablespoons lime juice freshly squeezed
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  4. Remove from the grill and let it rest before slicing.
Make the Mango Dressing
  1. In a blender, combine the diced mango, honey, lime juice, olive oil, salt, and pepper.
  2. Blend until smooth and creamy.
  3. Taste and adjust seasoning if necessary.
Assemble the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, and red onion.
  2. Add the sliced grilled chicken on top.
  3. Drizzle the mango dressing over the salad and toss gently to combine.
  4. Serve immediately and enjoy!
