Ingredients
  

  • 4 large boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 cup sautéed mushrooms
  • 2 tbsp minced garlic
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • to taste salt
  • to taste pepper

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Slice each chicken breast horizontally to create a pocket.
  3. Stuff each chicken breast with sautéed mushrooms, minced garlic, and shredded mozzarella. Secure with toothpicks.
  4. Sprinkle Italian seasoning, salt, and pepper over each stuffed breast.
  5. In a skillet over medium heat, melt olive oil and butter together. Sear the chicken on both sides until golden brown.
  6. Transfer the seared chicken breasts to a baking dish and bake for 20–25 minutes, or until fully cooked through.
  7. Once done, serve warm and enjoy!
